A pentalingual native of Venezuela, Ricardo Chaneton grew up with a mixture of European and South American cooking throughout his childhood. After graduating from culinary school and following a short stint at Le Gourmet at InterContinental Tamanaco Hotel in Caracas, Venezuela, Ricardo embarked upon a year-long apprenticeship and work life at 3-Michelin-starred Quique Dacosta in Denia, Spain. These were his first foray into the world of fine dining, which opened the doors to his next career-defining opportunity in Menton, France.
Ricardo joined 3-Michelin-starred Mirazur, the current no.1 restaurant from The World’s 50 Best Restaurants 2019, where he spent 7 years training under visionary chef-owner Mauro Colagreco. His duties as Head Chef comprised of leading day-to-day operations in the kitchen and helming a team of 30 chefs, as well as traveling extensively with Colagreco for inspiration, bringing a taste of Mirazur to the rest of the world.
Ricardo was most recently the Executive Chef of Petrus at Island Shangri-La Hong Kong, where he spent almost 4 years leading an award-winning team from the young age of 28. At Petrus, Chef Ricardo showcased creative French cuisine alongside the restaurant’s world-famous wine list, featuring a vertical selection of Petrus and back vintage wines from the finest vineyards of Bordeaux.
At MONO, Chef Ricardo combines his modern French training at 3-Michelin-starred kitchens around the world with his personal nuances, introducing a single tasting menu centered on seasonal ingredients.
