Ingredients 成分

Mash 薯蓉

  • 500g Agria Potatoes Agria 薯仔
  • 150g Butter 牛油
  • 100ml Milk 牛奶

Shepherd’s Pie Mix 餡料

  • 500g Lamb Mince 免治羊肉
  • 75g Diced carrot 甘筍
  • 100g Diced onion 洋蔥粒
  • 50g Diced Celery 西芹粒
  • 5g Dried Thyme 乾百里香葉
  • 2 tsp茶匙 Bisto granules Bisto調味粉
  • 1 Tbsp 湯匙 Tomato paste 蕃茄膏
  • 1 Tbsp湯匙 Worcestershire sauce 喼汁
  • 150ml Lamb stock 羊肉清湯

Method 做法

Topping 薯蓉

  1. Wash and peel the potatoes, cut them roughly into 4 and try to make the pieces even size so they all cook at the same time 先將薯仔洗淨、去皮並切成4塊,嘗試將其切得大小均勻,以便將它們同時煮熟。
  2. Place the potatoes into a pan of cold water and add a tbsp of salt to the water · 將薯仔放入一鍋冷水中,並加入一湯匙鹽。
  3. Gently bring to the boil and lower to a simmer, cook the potatoes until they become tender, a knife should go in without resistance, this should take about 12- 15 minutes · 將薯仔以慢火煮熟,直到變軟為止。薯仔熟透時應可輕易插入小刀,這大約需要12-15分鐘。
  4. Once cooked drain of the potatoes, allow them to sit in a colander for 4-5 minutes to drain properly, add them back to the pan and add the butter, mash the potatoes well with a hand masher. · 將薯仔煮熟並瀝乾水份,讓其在漏勺中靜置4-5分鐘以便完全瀝乾,然後將它們放回鍋中並加入牛油,以手動搗碎器將薯仔搗碎。
  5. Once mashed start to add the milk and beat with a spatula, season with a little salt and ground white pepper · 薯仔一旦搗成糊狀,便可開始加入牛奶並用抹刀攪拌,加入少許鹽和白胡椒粉調味。

Pie Mix 餡料

  1. Heat a heavy-based casserole pan and add a little cooking oil, once smoking hot crumble in the lamb mince (fry it off in 2 batches) allow it to sit for a couple of minutes before stirring, add a little salt and pepper and start to stir. Cooked the mince until brown, once browned drain the fat off in a colander over a bowl. Repeat until all the mince in browned, do not wash the pan.  加熱平底鑊,並加入少許食用油。平底鑊燒熱後,(分兩批)加入羊肉碎,先讓肉碎於鑊內靜置幾分鐘,然後拌炒,再加入少許鹽和胡椒粉。 肉碎炒至褐色後,將多餘的油脂隔入碗中。 重複直到所有肉碎都變成褐色,不要洗鍋。
  2.  Add the fat from your mince back to the pan and heat it back up, sweat off the carrot, onion, celery and thyme until they are nice and soft.  將隔出的羊肉油脂倒入鑊中加熱,加入甘荀、洋蔥、西芹及百里香葉炒至軟身。
  3. Now add the tomato paste and further cook on a gently heat for 2 -3 minutes. 然後加入蕃茄膏以慢火煮2-3分鐘。
  4. Add the Worcestershire sauce, Bisto and Lamb stock, bring to the boil and then add the lamb mince. 加入喼汁、Bisto調味粉及羊肉清湯煮至沸騰,再加入羊肉碎。
  5. Bring the mix to a gentle simmer and cook for 10 minutes. 再將混合餡料以慢火煮10分鐘
  6. Place your Pie mix in your chosen casserole dish, if the pis mix looks a little wet drain off some of the gravy.
    將餡料倒入您選擇的砂鍋菜中,如果餡料看起來太多水份,便隔去一些肉汁。
  7. Put your mash in a pipping bag and pipe it onto of the pie mix, I like to use a fork to rough up the top of the pie a little.  將薯蓉放進擠花袋中,於餡料上唧出薯蓉花。可用叉子把餡餅的頂部弄得隨意一點。
  8. Now put the pie in an oven at 180c for 35 -40minutes or until your potato is golden brown.  將批放進焗爐以180c焗35-40分鐘至表面金黃。
  9. Now to just serve my preferred thing with Shepherd’s pie is Heinz baked beans. 食用時可配搭Heinz焗豆。
