					<div class="elementor-text-editor elementor-clearfix"><ol><li>Pre heat the steamer to 100c 將蒸爐預熱至100c</li><li>Pull a large sheet of tin foil big enough to make the fish into a parcel 預備一張大錫紙，其大小足以包裹整塊三文魚</li><li>Lay the fish down on the tin foil and season with the celery salt and the Malden salt 將魚放到錫紙上，然後用西芹鹽和Malden鹽調味</li><li>Slice ½ the butter and place this on top of the salmon 切一半牛油，並將其放在三文魚上</li><li>Now place the herbs on top of the salmon and wrap the parcel 將香草放在三文魚上，然後用錫紙包裹</li><li>Place your fish parcel on a baking tray and put in the steamer 將魚塊放在烤盤上，然後放入蒸爐中</li><li>After 25 minutes check the fish, you are looking for it to start to break apart with no resistance 蒸約25分鐘後檢查魚塊，您會發現它很容易便會分離</li><li>If the fish is still firm re seal the envelope and put it back in for another 5 minutes 如果魚質仍然牢固，請重新包裹，然後再放回蒸爐蒸5分鐘</li><li>Once its starting to fall apart remove form the oven and leave it for 5 minutes to cool slightly 魚肉一旦開始散開，請從烤箱中取出並放置5分鐘，使其稍微冷卻</li><li>Melt the other half of the butter in the pan 將鍋中把另一半的牛油融化</li><li>Now place the salmon in the bowl and carefully using 2 forks break up the flesh 現在將三文魚放入碗中，並用2把叉子小心地將魚肉切碎</li><li>Slowly add some of the cooking liquids to moisten the fish and check for seasoning 慢慢加入一些烹調魚汁，使其濕潤，並加入調味料</li><li>Then fill your jars 2/3 full with the salmon and press the mixture down. 然後將三文魚肉裝入玻璃瓶至2/3滿，然後將混合物壓下。</li><li>Now pour over the top of the salmon some of the melted butter plus a bay leaf and seal the jars 現在將融化了的牛油和月桂葉倒在三文魚上，然後將玻璃瓶密封。</li><li>Place the jars in the steamer for a further 20 minutes to seal, after 20 minutes remove from the steamer and chill 將玻璃瓶放入蒸爐中蒸20分鐘，然後取出冷卻。</li></ol></div>

					<div class="elementor-text-editor elementor-clearfix"><ol><li>Place the vinegar and sugar in a pan and warm until the sugar is dissolved, place it to one side to cool down 將醋和糖放到鍋中，加熱至糖溶解，放到一邊冷卻</li><li>Slice the cucumber on a mandolin into moon shapes 將青瓜以曼陀鈴切成月亮形狀</li><li>Sprinkle with a litte Salt and allow to sit for 5 minutes 撒少許鹽，靜待5分鐘</li><li>After 5 minutes rinse off the salt and drain the water 5分鐘後，將鹽沖洗乾淨並排乾水</li><li>Add the chopped dill and pour over the cooled pickle liquid 加入切碎的蒔蘿，倒入冷卻了的醃製液體中</li><li>Let the cucumber sit for 1 hour before using 備用前先將青瓜醃1小時</li><li>When ready to use just drain off the pickling liquid 最後將青瓜排去醃製液體備用</li></ol></div>

 	<li>Wash and peel the potatoes, cut them roughly into 4 and try to make the pieces even size so they all cook at the same time 先將薯仔洗淨、去皮並切成4塊，嘗試將其切得大小均勻，以便將它們同時煮熟。</li>
 	<li>Place the potatoes into a pan of cold water and add a tbsp of salt to the water
· 將薯仔放入一鍋冷水中，並加入一湯匙鹽。</li>
 	<li>Gently bring to the boil and lower to a simmer, cook the potatoes until they become tender, a knife should go in without resistance, this should take about 12- 15 minutes
· 將薯仔以慢火煮熟，直到變軟為止。薯仔熟透時應可輕易插入小刀，這大約需要12-15分鐘。</li>
 	<li>Once cooked drain of the potatoes, allow them to sit in a colander for 4-5 minutes to drain properly, add them back to the pan and add the butter, mash the potatoes well with a hand masher.
· 將薯仔煮熟並瀝乾水份，讓其在漏勺中靜置4-5分鐘以便完全瀝乾，然後將它們放回鍋中並加入牛油，以手動搗碎器將薯仔搗碎。</li>
 	<li>Once mashed start to add the milk and beat with a spatula, season with a little salt and ground white pepper

					<div class="elementor-text-editor elementor-clearfix"><ol><li>Heat a heavy-based casserole pan and add a little cooking oil, once smoking hot crumble in the lamb mince (fry it off in 2 batches) allow it to sit for a couple of minutes before stirring, add a little salt and pepper and start to stir. Cooked the mince until brown, once browned drain the fat off in a colander over a bowl. Repeat until all the mince in browned, do not wash the pan.  加熱平底鑊，並加入少許食用油。平底鑊燒熱後，（分兩批）加入羊肉碎，先讓肉碎於鑊內靜置幾分鐘，然後拌炒，再加入少許鹽和胡椒粉。 肉碎炒至褐色後，將多餘的油脂隔入碗中。 重複直到所有肉碎都變成褐色，不要洗鍋。</li><li> Add the fat from your mince back to the pan and heat it back up, sweat off the carrot, onion, celery and thyme until they are nice and soft.  將隔出的羊肉油脂倒入鑊中加熱，加入甘荀、洋蔥、西芹及百里香葉炒至軟身。</li><li>Now add the tomato paste and further cook on a gently heat for 2 -3 minutes. 然後加入蕃茄膏以慢火煮2-3分鐘。</li><li>Add the Worcestershire sauce, Bisto and Lamb stock, bring to the boil and then add the lamb mince. 加入喼汁、Bisto調味粉及羊肉清湯煮至沸騰，再加入羊肉碎。</li><li>Bring the mix to a gentle simmer and cook for 10 minutes. 再將混合餡料以慢火煮10分鐘</li><li>Place your Pie mix in your chosen casserole dish, if the pis mix looks a little wet drain off some of the gravy.<br />將餡料倒入您選擇的砂鍋菜中，如果餡料看起來太多水份，便隔去一些肉汁。</li><li>Put your mash in a pipping bag and pipe it onto of the pie mix, I like to use a fork to rough up the top of the pie a little.  將薯蓉放進擠花袋中，於餡料上唧出薯蓉花。可用叉子把餡餅的頂部弄得隨意一點。</li><li>Now put the pie in an oven at 180c for 35 -40minutes or until your potato is golden brown.  將批放進焗爐以180c焗35-40分鐘至表面金黃。</li><li>Now to just serve my preferred thing with Shepherd’s pie is Heinz baked beans. 食用時可配搭Heinz焗豆。</li></ol></div>
